How to make| Vanilla Cupcakes
Today I made vanilla cupcakes and I thought I'd show you  how to make them. They're very quick and easy to make. This recipe makes about 12-16 cakes. I didn't make up this recipe, it's a recipe form an app called 'the hummingbird bakery'. Enjoy!

Ingredients:

  • 80g of unsalted butter
  • 280g of caster sugar
  • 240g of plain flour
  • 1 tbsp of baking powder
  • 1/4 tsp of salt
  • 240ml of whole milk
  • 1/2 tsp of vanilla essence
  • 2 large eggs

Step 1:
Preheat the oven to 190°C, (375°F), gas mark 5. Line a muffin tin with muffin case, you will probably need to fill up a whole tray.

This is what the breadcrumbs should look like!

Step 2:
Using a hand-held electric whisk, slowly beat together the butter, flour, sugar, baking powder and salt. They should look like breadcrumbs.

This is what the mixture should look like!

Step 3:
In a separate bowl or jug, whisk together the milk, vanilla essence and eggs. Pour three quarters of the mixture into the dry ingredients and mix well. Add the rest of the liquid ingredients into the bowl and mix all the ingredients until they are fully incorporated. The mixture should be smooth with no lumps.

Step 4

Spoon the batter into the muffin cases, using an equal amount of batter between each muffin case (I usually use about 3 tbsp of batter). Put them in the oven for 18-20 minutes. When they are done they should look a golden colour and when you push down on them (lightly) they should spring back up. Put each cake onto a cooling rack until cooled.

Step 5

For decoration i used shop bought frosting instead of making my own, its very easy to make your own all you need is butter and icing sugar. Also i added sprinkles onto the cakes just to make them look more pretty.
